ingredient:
- 300 grams of fresh shrimp
- 2 pieces of galangal
- 2 stalks of lemongrass
- 3 kaffir lime leaves
- 100 grams of straw mushrooms
- 5 bird's eye chillies
- 3 tablespoons fish sauce
- 3 tablespoons lemon juice
- 2 tablespoons chili paste
- 1/2 cup coconut milk
- 4 cups broth
method:
- Boil the soup in a pot, add galangal, lemongrass and kaffir lime leaves and boil until fragrant.
- Add shrimp and straw mushrooms and boil until cooked.
- Add chili paste and coconut milk. Season with fish sauce, lime juice and chili.
- Taste and adjust as desired. Ladle into bowls and serve.
