- Pad Thai noodles 200 grams
- 100 grams of fresh shrimp
- 50 grams of firm tofu
- 100 grams of bean sprouts
- 2 eggs
- 3 shallots
- 3 tablespoons ground peanuts
- Chives leaves 50 grams
- 1 lemon
- 2 tablespoons fish sauce
- 2 tablespoons palm sugar
- 2 tablespoons tamarind juice
method:
- Sauté the shallots and tofu in oil until fragrant and the tofu is yellow.
- Add shrimp and stir until cooked.
- Crack in the eggs and stir to combine.
- Add the Pad Thai noodles and stir until the noodles are soft.
- Season with fish sauce, palm sugar and tamarind juice.
- Add bean sprouts, chives, and crushed peanuts. Stir to combine.
- Spoon onto plates and serve with lime and chili powder.
